Jasper Morris MW, Inside Burgundy
Two barrels made with 50% whole bunch vinification and no new wood, the grapes coming from the upper part of Corbeaux adjacent to Mazis-Chambertin. Very intense purple with a richer bouquet, sweetly sensual rather than the more refined style of some Corbeaux, but with enough acidity behind to keep it on the straight and narrow. Minerals emerge to finish.
Originally from Melbourne, Jane Eyre “fell in love” with Burgundy while doing work experience at Domaine Chevrot in 1998. Since 2011 she has developed her own négociant business here and now makes a range of exceptional, site-specific wines from celebrated vineyards across Burgundy and Beaujolais.
