
Domaine de l'Enclos: The New Face of Chablis
Domaine de l'Enclos is one of the most exciting young estates in Chablis. Founded by brothers Romain and Damien Bouchard in 2016, the estate is built on a foundation of family history (their father was also a winemaker) but driven by a modern, environmentally conscious vision.
The heart of the domaine is a large, gravity-fed cellar built on the site of the former "Enclos" of the Abbey of Pontigny, allowing for incredibly gentle handling of the grapes and wine.

Organic Commitment: The estate is certified organic across all 29 hectares of its vineyards. The Bouchard brothers prioritize soil health, utilizing organic fertilizers and mechanical weeding rather than chemical sprays.

Minimalist Cellar Work: The winemaking is intentionally "hands-off." They use native yeasts for fermentation and avoid adding any sulfur until the very end of the process, and even then, only in minimal amounts.

Pure Terroir Expression: By avoiding new oak and focusing on stainless steel or older barrels, the wines provide a transparent look at Chablis' famous Kimmeridgian limestone soils.

Domaine de l'Enclos wines are known for being vibrant, energetic, and intensely mineral. While they possess the classic Chablis "cut" and acidity, the organic farming often results in a slightly broader, more textured mid-palate compared to more industrial examples.
