The Craft and the Cave
The secret to Giaconda’s distinct profile lies in a perfect marriage of geology and engineering. The vineyards sit on 450-million-year-old granitic loam, a unique soil that imparts a signature mineral energy to the fruit.

The Granite Cellar: To ensure perfect aging conditions, a maturation cave was blasted directly into the solid granite hillside. This natural cellar provides a constant, cool environment where the wines evolve with incredible grace.

Minimal Intervention: The winery follows a strictly organic philosophy. By utilizing indigenous yeasts, gravity-flow systems, and French oak maturation, the team allows the natural character of the Beechworth fruit to speak for itself.
