Description
Intense, dark ruby colour. Notes of dark red fruit, broody spice and violets with a crack of black pepper. A complex and layered palate with hints of sweet dark fruit and cinnamon, finishing with juicy tannins.
The Paarl fruit was co-fermented with Viognier, as both varieties were ripe at the same time. The Darling Shiraz is from a cooler site and harvested later and was fermented and aged separately. The Swartland fruit is from a dry land vineyard and adds depth to the final blend. Fermentation took place in French oak foudre and in stainless steel tanks. Pump-overs were done up to three times a day ensuring good colour and flavour extraction. After pressing, the wine was transferred to French and American oak barrels and matured for 18 months, with 20% new French barrels used.
