Domaine l'Enclos' 2020 Chablis Grand Cru Vaudsier demonstrates both elegance and power: apple, pear, quince, orange and orange zest, notes of vanilla, bread crust and coffee with milk. Everything is dominated by a scent of sea air, dried oyster shell and seaweed. A great opening on the tongue, lots of light and juicy fruit combine with a fine acidity which is wonderfully integrated into the fondant of the fruit. A high-class Chablis.
Chablis Grand Cru Vaudésir - 0,57 ha
Vineyard : Replanted in 1992 by our father, located on the site (south facing) of the famous Vaudésir valley.
Wine : Greedy, complex and long, with notes of ripe fruits. To keep for a few years.
Two brothers Romain and Damien Bouchard are behind this ‘new’ Chablis producer that was established in 2016. However, they are not unfamiliar to the wine business, their father sold his business (Pascal Bouchard) to fund his sons’ venture. They have 29 hectares of organically farmed vineyards, with 15 hectares of grand cru vineyards, eight hectares of premier cru vineyards and the rest Chablis and Petit Chablis.
All of the wines we have listed are certified organic by Ecocert. In line with a minimal intervention way of working, the wines are largely handpicked and fermented using indigenous yeasts in their new underground gravity cellar in Chablis with minimal sulfur use after pressing and before bottling only.
