Full crimson-purple; in mainstream Clarendon Hills style, medium- to full-bodied, with obvious French oak on the bouquet and running through the textured palate; spicy black fruits and a touch of licorice make the running; alcohol and dusty tannins have been held in restraint.
The grapes for our Bakers Gully Syrah were handpicked from 15-year-old, dry-grown vines. Following destemming, the grapes were fermented whole berry using wild yeasts to increase the grape's varietal essence and minimize bitter tannin extract. All pressings were returned to the barrels for 18 months of aging in a majority new, tight-grained French oak and a balance of one- to four-year-old French oak. This wine was bottled without fining or filtration.
